Banana & Chia Seed Breakfast Pudding

Chia seed pudding in the perfect breakfast for when you're on the go or simply too lazy to cook. Yup, that happens.

Ingredients
  

  • 1 cup plant-based milk
  • 1 ripe organic banana
  • ¼ cup chia seeds
  • ½ teaspoon Ceylon cinnamon
  • Toppings of choice

Instructions
 

  • Before going to bed, pulse all the ingredients, except toppings, in a blender or a food processor.
  • Divide into two Mason jars or bowls and refrigerate until the next morning.
  • For a breakfast on the go, put your favourite toppings in a air-tight container, refrigerate if necessary, and bring it to work along with your Mason jar. This way you'll be able to garnish your pudding with fresh and crunchy toppings.

Notes

If you don't have a food processor, you can use an immersion blender or simply smash the banana with a fork before blending with the rest of the ingredients.
Topping ideas: rehydrated Goji berries, buckwheat groats, nuts, pepitas, fresh or dried fruits, homemade jam, coconut shavings, homemade granola
